
Peanut butter eggs are a huge thing here in Central Pennsylvania. From March to May every local diner, coffee shop, and mom and pop store are selling homemade chocolate covered eggs. When we first moved to our town, it was one of the things we noticed right away – the eggs were following us everywhere! Although I’m not from PA originally, I have come to know my way around a peanut butter egg or two. The homemade ones are akin to Buckeyes, which I love, but when purchasing from any old place you run the risk of biting into something drowned in powdered sugar or a wimpy chocolate coating that just isn’t ideal. As a self proclaimed dessert snob and a card carrying member of the dark chocolate is the only chocolate club, I felt the need to make my mark on the peanut butter egg world. Dramatics aside, the result is a toothsome, balanced egg that is substantially peanut buttery as opposed to overly sweet. It’s like a Reece’s egg, but homemade which makes it better 😉
Chocolate Dipped Peanut Butter Eggs

A classic springtime treat that might just be better than that one famous brand 😉

Ingredients
- 2 cups sugar
- ½ cup milk
- ¼ cup salted butter
- 6 ounces peanut butter
- 3.5 ounces marshmallow creme
- ⅓ cup all-purpose flour
- 1 bag dark chocolate melting wafers
Instructions

Add sugar, milk, and butter to a saucepan over medium heat. Bring to a boil and stir continuously for 5 mins, then remove from heat.

Stir in peanut butter and marshmallow creme, then slowly incorporate flour and stir until combined.

Pour peanut butter mixture onto a pan lined with parchment paper and allow to cool for about 30 minutes. When the fudge is cool enough to handle, use your hands to roll it into balls. It may take a moment for the fudge to be smooth enough to sculpt the balls into egg shapes.

When finished shaping the eggs, insert a toothpick into each one, and allow them to set completely at room temperature. Then, chill in the fridge for about an hour to avoid any melting while dipping.

Melt your chocolate, dip each egg, allow to harden and enjoy! Eggs will keep at room temperature in an air tight container for up to a week, they can also be frozen and thawed, but are best enjoyed fresh!
Notes
When shaping the eggs, your hands will likely get a little greasy. If the fudge has started to set and is a bit crystallized, you may need to roll it between your hands a bit longer to warm it back up.
